Ingredients
 
 

  • 8 lamb chops about 1.5 inch thick
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh oregano chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon
  • Zest of 1 lemon

Instructions
 

Prepare the Marinade:

  • In a mixing bowl, combine the olive oil, minced garlic, rosemary, thyme, oregano, cumin, smoked paprika, salt, pepper, lemon juice, and lemon zest. Mix well.

Marinate the Lamb:

  • Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb, ensuring each chop is well coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.

Preheat the Grill:

  • Preheat your grill to medium-high heat. Clean and oil the grates to prevent sticking.

Grill the Lamb Chops:

  • Remove the lamb chops from the marinade and let any excess drip off. Place the chops on the grill and cook for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached. Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C) for medium-rare.

Rest the Lamb:

  • Remove the lamb chops from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute, resulting in more flavorful and tender meat.

Notes

  • For extra flavor, reserve some of the marinade before adding the lamb and brush it onto the chops during the last minute of grilling.
 
  • Serve these lamb chops with a side of grilled vegetables or a fresh Greek salad for a complete Mediterranean-inspired meal.
 
  • If you prefer your lamb more well-done, adjust the grilling time accordingly, but be careful not to overcook, as lamb can become tough.
