Instructions
 

  • Prepare the Custard Mixture: In a large mixing bowl, whisk together the eggs, heavy cream, vanilla extract, sugar, cinnamon, and a pinch of salt until smooth and well combined.
  • Soak the Brioche: Gently dip each slice of brioche into the custard mixture, allowing it to soak briefly on each side. Ensure not to oversoak to maintain the bread's integrity.
  • Cook the French Toast: Heat a non-stick skillet or griddle over medium heat and add a small amount of butter. Once the butter has melted, add the soaked brioche slices, cooking for 3-4 minutes on each side until they achieve a golden brown hue and are fully cooked. Repeat with the remaining slices, adding more butter as necessary.

Make the Berry Compote: Simultaneously, in a saucepan over medium heat, mix the berries, orange juice, sugar, and lemon zest. Allow the mixture to simmer for 10-15 minutes, stirring occasionally, until the berries have softened and the sauce has thickened slightly. Remove from the heat once done.

  • Serve: Arrange the French toast on plates, generously topping each with the warm berry compote.
